Fresh Figs


Although I’ve planted two fig trees, they are still to small (or stubborn) to bear fruit. Well there is always the farmers market....
There are many ways to use them, I’ve tried a new one today that was good enough to share, I’ve never written my own recipe, I’ll give it a try.

Savoury fig tart:
6 fresh figs
2 red onions
1 sheet of puff pastry
8 fresh thyme sprigs
60 grams blue cheese
a little butter and black pepper

To start, slice the red onions very thinly, on medium heat caramelise with a little butter in a pan (this will take a while).
Put the puff pastry on a baking tray lined with baking paper, slice the figs and line them up on top of the pastry, put on top the thyme, crumbled blue cheese, freshly ground black pepper and the onions.
Bake in the oven for about 12minutes on 180degrees.

Including the kids, we’re all big fans of blue cheese. Love it, hate it, feta cheese would probably work as well.
